Sustainability in the olive oil supply chain rests on four key pillars: environmental, ethical, nutritional and economic. These aspects allow the Italian olive oil industry to stand out on the world market as they guarantee respect for the soil and the enhancement of the by-products, transparency in employment, the traceability and quality of the oil and a fair income for farmers. We explore these aspects with UNAPROL, the largest European consortium of Italian olive companies.
